Toss some blueberries in one, sliced bananas in another and orange zest in the third. (Drizzling the sliced bananas with lemon juice prior to inclusion in the batter will prevent discoloring.)

Stack your pancakes between sheets of foil and freeze the stack in a freezer bag. You can make this brunch recipe several days ahead of time.

When you’re just about ready to serve, wrap each stack in a foil pouch and warm in the oven at 300 degrees for about 15 minutes.

Healthy Do-Ahead Brunch Meal Idea

Ambrosia salad is just one of many healthy recipes that makes a great do-ahead brunch.The evening before your brunch, slice up a selection of fruits, such as strawberries, mandarin oranges, bananas, diced fresh apple, frozen blueberries and Maraschino cherries.
