Holiday Gumdrop Cookies

Ingredients:

  • 1 1/2 cups spiced gumdrops
  • 3/4 cup coarsely chopped walnut
  • 1/2 cup golden raisins
  • 1 3/4 cups all-purpose flour, divided
  • 1 cup packed brown sugar
  • 1/2 cup shortening
  • 1 egg
  • 1/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Preparation:

Step 1: Cut gumdrops into small pieces, reserving black ones for another use. Now, place gumdrops in a bowl.

Step 2: Add walnuts, raisins and 1/4 cup flour to blow; toss to coat and set aside

Step 3: In a mixing bowl, cream brown sugar and shortening. Add egg; beat in buttermilk.

Step 4: Combine baking soda, salt and remaining flour; stir into creamed mixture.

Step 5: Add gumdrop mixture and mix well. Chill for 1 hour.

Step 6: Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets.

Step 7: Bake at 400 degrees F for 8-10 minutes. Cool for 2 minutes before removing to a wire rack.

Christmas Cookie Cut Outs

Ingredients:
  • 3 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1 teaspoon ground nutmeg
  • 1 pinch ground cinnamon
  • 1 cup butter, softened
  • 1 cup white sugar
  • 3 eggs, beaten
  • 1 teaspoon vanilla extract

Preparation:

Step 1: Sift together flour, cream of tarter, baking soda, nutmeg, and cinnamon in a bowl; set aside.

Step 2: Beat the butter and sugar with electric mixer in a large bowl until smooth.

Step 3: Add the eggs one at a time, allowing each egg to blend into the butter mixture before
adding the next.

Step 4: Beat in the vanilla with the last egg.  Mix in the flour mixture until just incorporated.

Step 5: Cover and refrigerate dough overnight.

Step 6: Preheat an oven to 350 degrees F (175 degrees C). 

Step 7: Roll out dough on floured surface to 1/2 inch thick. Cut into shapes with Christmas
cookie cutters. 

Step 8: Place cookies 1 inch apart on ungreased cookie sheets.

Step 9: Bake in the preheated oven until the edges are golden, 8 to 10 minutes.

Step 10: If using cutters that have small appendages, such as reindeer legs, reduce the baking time or they will overcook.

Step 11: Remove cookies to a wire rack to cool completely.

Frosting Preparation:

  • 4 cups confectioner’s sugar
  • 1/2 cup butter, softened
  • 1 tablespoon vanilla extract
  • 1/4 cup milk
  • any color food coloring (optional)

Step 1: Beat the butter and confectioner’s sugar with an electric mixer in a large bowl, mixture will be stiff.

Step 2: Add the vanilla and slowly mix in the milk a little at a time until a spreading consistency is reached.

Step 3: Stir in food coloring, if desired. Make sure cookies are completely cool before frosting.

Nutmeg Cookie Logs

Ingredients:

  • 1 cup butter, softened
  • 3/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 egg
  • 2 teaspoons rum flavored extract
  • 3 cups all-purpose flour
  • 1 teaspoon ground nutmeg
  • 3 tablespoons butter
  • 2 1/2 cups confectioner’s sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 teaspoon rum flavored extract
  • 3 drops red food coloring

Preparation:

Step 1: Preheat oven to 350 degrees F (180 degrees C).

Step 2: Cream together 1 cup butter or margarine and  white sugar.  

Step 3: Stir in 2 teaspoons vanilla, egg, and 2 teaspoons rum flavoring, then mix well.

Step 4: Add 3 cups flour and nutmeg.

Step 5: Roll into long “logs” 1/2 inch in diameter, then cut logs into 3 inch strips.

Step 6: Place on lightly greased cookie sheets and bake 12 to 15 minutes.

Step 7: Let cool and frost.

Frosting Preparation::  

Step 1: Cream together 3 tablespoons butter and confectioner’s sugar. 

Step 2 : Add 1/ 2 teaspoon vanilla and 1 teaspoon rum. 

Step 3: Stir in milk (may add more to reach desired consistency).  

Step 4: Add food coloring and spread over cooled cookies. 

Step 5: Decorate with chocolate sprinkles (optional

Christmas Cornflake Wreath Cookies

Ingredients:

  • 1/2 cup butter
  • 4 cups miniature marshmallows
  • 1 teaspoon green food coloring
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 4 cups cornflakes cereal
  • 1 (2.25 ounce) package cinnamon
  • red hot candies

Preparation:

Step 1: Microwave marshmallows and butter on High for 2 minutes.  

Step 2: Stir, then microwave on High for 2 minutes more.  Stir again.  (This can be
done in a double boiler if one doesn’t have a microwave.)

Step 3: Add and mix quickly the coloring, extracts, then cornflakes.  

Step 4: Drop by spoonfuls in clumps on greased wax paper and decorate with 3 red hots each.

Step 5: Once cool, transfer to lightly greased serving/storage tray with lightly greased fingers.

Christmas Orange Rind Cut-Out Cookies

Ingredients:

  • 1 cup butter, softened
  • 1 1/4 cups white sugar
  • 2 eggs
  • 3 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup sour cream
  • 2 teaspoons orange zest
  • 1/3 cup white sugar
  • 1/3 cup finely chopped almonds

Preparation:

 Step 1: In a large bowl, cream butter and 1 1/4 cups of the sugar. 

Step 2: Add eggs, one at a time, beating well after each.

Step 3: Sift flour and baking powder together. 

Step 4: Add flour mix to the butter mixture alternately with the sour cream.

Step 5: Blend very well and add the orange zest.

Step 6: Wrap tightly and chill overnight.

Step 7: Preheat oven to 375 degrees F (190 degrees C). Lightly grease
baking sheets.

Step 8: Turn chilled dough out on to a floured surface and roll out to 1/4
inch thick. Now, cut into desired shapes.

Step 9: Combine the 1/3 cup white sugar and the finely chopped almonds
and sprinkle over the tops of the cookies. 

Step 10: Place cookies on the prepared baking sheet and bake at 375 degrees F (190 degrees C)
for 10 to 12 minutes. 

Step 11: Remove from oven and let cookies cool on rack.
